Used homemade Berbere to cook halal mutton in an Ethiopian style with an Indian touch.
Below are ingredients and steps used to make Berbere Mutton. Berbere mutton goes well with Indian chapatti’s.

Berbere Recipe.
2 tsp Kashmir red chili powder
1 tsp regular red chili
2 tsp turmeric
1 tsp paprika
2 tsp garlic powder
2 tsp ginger powder
1/4 tsp cinnamon
Fresh, roasted, grinded
10 curry leaves
4 tsp coriander seed
1 tsp cumin
1 tsp fenugreek
1 tsp ajwain
8 cloves
couple of blades of maces
4 cardamom
Once roasted and grounded, mix all the above

Ingredients for Berbere Mutton
6 tsp Berbere
1/2 lb Mutton, small pieces
1/2 lb Mustard greens
1 Onion, finely chopped
1/4 inch Ginger
6 Garlic cloves
1/2 spoon Mustard
1 tsp Cumin
1 strip Rosemary
1 stick of butter
4 tsp Olive oil
Salt to taste

Step1: Use hot Olive oil, Salt, Black Pepper, Ginger-Garlic-Mustard paste, 2 tsp Berbere to Fry and cook Mutton until tender.
Step2: Use hot Olive oil, Ginger-Garlic-Mustard paste, 2 tsp Berbere to lightly fry the Mustard greens.
Step3. In a big pan, once hot, put 1 stick of Butter, once melted put Onion and wait until it get to light brown color. Once its is light brown, put Ginger-Garlic, Rosemary, Cumin, Black Pepper and lightly fry. Once it is fried, put the fried Mutton and then the lightly fried Mustard Green. Cook it on slow heat for 5 minutes.
Step: Garnish the Berbere Mutton with Cashews, Almonds and pistachios.
